Flourless recipes to make during lockdown

With panic buying wiping most food items from supermarket shelves, bakers are left in disappointment when arriving at the shops. As flour is still hard to obtain and there is lots of time to fill, here are two of the best flourless recipes to make during lockdown boredom. 

Each recipe can be made by hand and contains items that are easy to find. 

Flapjack

Ingredients:

  • 150 grams of butter
  • 150 grams of golden syrup
  • 150 grams of granulated sugar
  • 250 grams of porridge oats

Method:

  1. Preheat the oven to gas mark 2, 150°C or 130°C for a fan oven.
  2. Line a 20cm by 20cm square baking tray with baking paper.
  3. Add the butter, golden syrup and sugar to a pan and melt on a low heat.
  4. Remove the mixture once the sugar has dissolved. 
  5. Add the oats then mix well.
  6. Empty your mixture into your tin and level. 
  7. Bake the mixture for 45 to 50 minutes. 
  8. Leave to cool, then cut into slices and enjoy!

You can add raisins, sultanas or seeds for an added twist. You could also melt some chocolate to cover it with.

Mixed-fruit Brownies

Ingredients:

  • 75 grams of margarine (Alternatively, use butter.)
  • 200 grams of granulated sugar
  • 100 grams of light brown sugar
  • Pinch of salt
  • 4 eggs
  • 80 grams of cocoa powder
  • 80 grams of frozen mixed fruit (Cherries could also be used)

Method:

  1. Preheat the oven to gas mark 4, 180°C or 160°C for a fan oven.
  2. Line a 20-cm by 20-cm square baking tray with baking paper.
  3. Melt the margarine in the microwave using a microwave-safe bowl or melt it in a pan on a low heat.
  4. Add in the white and brown sugar then mix well. 
  5. Beat the eggs in a separate bowl. Once well beaten, add to your existing mixture. 
  6. Gently stir in the cocoa powder. 
  7. Fold in your fruit and pour into the tray. 
  8. Place it into the oven for 30 to 35 minutes. To see if cooked, place a knife into the middle of the mixture. If it comes out clean with no wet mixture, it is ready. If wet mixture sticks to it, bake for another five minutes.
  9. Let them cool before slicing and serving. 

These make an excellent dessert when served with ice cream and a sprinkle of icing sugar. 

If preferred, you can leave out the fruit, but we think it works well.
