Mulled wine brownie recipe

DAY TWO

It’s day two of Brig’s 2020 Food Advent Calendar. Today it is all about brownies with a Christmas twist. Credit for this recipe goes to BBC Good Food.

Ingredients

  • 100g of dark chocolate 
  • 150g of butter 
  • 200g light brown muscovado sugar 
  • 1 large egg and 1 egg yolk
  • 100ml of any red wine
  • 50g cocoa powder
  • 100g plain flour
  • A pinch of nutmeg and ground cloves
  • ¼ tsp each of cinnamon and ginger

Step 1

Heat your oven to 180C/160C fan/gas 4. Then, grease and line the base of a brownie tin with parchment paper (making sure the tin is not too big).

Step 2

Next, melt the chocolate on a low heat on the hob in a pan. Alternatively, microwave it for 30 seconds at a time stirring until it is smooth.

Step 3

Mix the flour and cocoa powder together with the spices and a pinch of salt then set aside. Using an electric whisk beat the butter and sugar together until super light and fluffy then whisk in the egg and yolk.

Step 4

Add in the melted chocolate, wine and flour mixture and whisk until all combined.

Step 5

Pour the batter into the tin and bake for 15 mins – it is okay if they are slightly soft in the middle as they will set. Put into the fridge to firm up.
