Marshmallow Christmas cupcakes | Part two

Combine marshmallows and cupcakes for the perfect festive treat with these three designs. Topped with glace icing, they’re fun and simple to make. All you need are marshmallows, sweets, icing pens and cupcakes. 

Cupcake recipe

Cake ingredients:

  • 220g caster sugar
  • 220g margarine
  • 4 eggs
  • 220g flour
  • 1 teaspoon baking powder
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract 

Icing ingredients: 

  • 250g icing sugar
  • 2 tablespoons water

Decorations required: 

  • Icing pens 
  • Large marshmallows
  • Small marshmallows 
  • M&Ms/Smarties
  • White chocolate
  • Milk chocolate

Cupcake method:

  1. Preheat the oven to 180C/350F/Gas 4.
  2. Line two 12-hole muffin tins with cupcake cases.
  3. In a large bowl, cream your margarine and sugar together. It should turn pale and fluffy. 
  4. Beat each egg into the mixture one at a time alongside the vanilla extract. 
  5. Sieve your flour into the mixture a little at a time and fold it in. 
  6. Add a little milk until the cake mixture drops off the spoon. 
  7. Spoon the cake mixture into the cases, around halfway full. 
  8. Bake in the oven for 10 to 15 minutes. Once ready, they will turn golden on top. To check you can insert a skewer and if it comes out clean, the cake is ready. 
  9. Place on a wire rack to cool.

Icing method:

  1. Sieve all of your icing sugar into a large bowl. 
  2. Gradually add the water until it forms a paste-like consistency. 
  3. Spread it on your cakes. 

Penguin

1) Melt your milk chocolate in the microwave in 30 second bursts, stirring each time until it is smooth.

2) Dip a large white marshmallow into the chocolate, coating it apart from a small part for the front. Stick it onto your iced cupcake.

3) Cut a yellow smartie or M&M in half and use chocolate to stick it onto the penguin halfway up the white belly of it.

4) Once the chocolate is shot, use your icing pen to draw dots for eyes.

Christmas Pudding 

1) Melt your milk chocolate in the microwave in 30 second bursts, stirring each time until it is smooth.

2) Coat your large marshmallow in the chocolate and place it on your iced cupcake.

3) Once the chocolate is set, drip glace icing over the top.

4) Add a red and green Smartie/M&M to the top.

Gingerbread man

1) Stick two large marshmallows together with glace icing, opposite ends up. Stick four little marshmallows on as arms and legs.

2) Melt your milk and white chocolate together in the microwave in 30 second bursts, stirring each time until it is smooth and lighter in colour.

3) Coat your marshmallows in the chocolate and stick it onto the iced cupcake.

4) Once the chocolate is set, draw on a face and buttons with your icing pens.
