Student recipe: vegetable fritters

Want an easy meal that doesn’t involve pasta? Then try these vegetable fritters. They’re crispy, flavoursome and packed with nutritious vegetables. 

Furthermore, they’re adaptable to whatever vegetables you happen to have in your fridge. Just make sure the mixture is stiff enough to fry. If it’s too sloppy, add some flour. 

You will need:

  • A large bowl 
  • A frying pan
  • Oil

Courgette and pea fritters

  • 1 grated courgette
  • ½ cup peas
  • ½ cup plain flour 
  • A pinch of salt and pepper 
  1. In your large bowl, mix all your ingredients until the mixture holds together. 
  2. Heat up some oil in your frying pan and add one tablespoon of your mixture, moulded into a flat circular shape.
  3. Fry each side on a medium heat for around two minutes until they turn golden brown. 
  4. Repeat until you have used all of your mixture. 

Cheese and sweetcorn fritters

  • ¼ cup plain flour
  • 2 eggs, beaten
  • 170g of tinned sweetcorn
  • 1 diced onion
  • ½ cup grated cheese
  • A pinch of salt and pepper 
  1. Combine the flour and eggs until it forms a thick paste. 
  2. Add the rest of the ingredients and mix until it is fully combined. It should be stiff. 
  3. Heat up some oil in your frying pan and add one tablespoon of your mixture, moulded into a flat circular shape.
  4. Fry each side on a medium heat for around two minutes until they brown. 
  5. Repeat until you have used all of your mixture. 

Cheese and potato fritters

  • 2 grated potatoes
  • 1 grated onion
  • ½ cup cheese
  • 1 beaten egg
  • 1 teaspoon dried herbs
  • Sprinkle of salt and pepper
  1. Place your potato and onion in a tea towel and squeeze the water out over the sink, before adding to your large bowl.
  2. Add the rest of the ingredients to the mixture and combine until stiff. 
  3. Heat up some oil in your frying pan and add one tablespoon of your mixture, moulded into a flat circular shape.
  4. Fry each side on a medium heat for around five minutes until they brown. 
  5. Repeat until you have used all of your mixture. 

Fritters are best served with a dipping sauce or salad. Add in some garlic or chili flakes for a sensational twist.
