In honour of World Vegan Day (November 1), Stirling’s Vegan & Rights for Animals Society (VERA) has kindly shared some vegan student recipes with Brig. First up on the menu is a student classic: cheesy pasta. As well as being vegan, it’s IBS-friendly too!

Ingredients
- 1 cup pasta
- 1 tbsp plain flour
- 1/4 cup oat milk
- 4 tbsp nutritional yeast
- Garlic salt, to taste
- Black pepper, to taste
- Oregano, to taste
- 1 tbsp paprika
- 1 tsp garlic paste (optional if you have IBS/Crohn’s)
Method
Step one: Using salted water, put the pasta on to boil for 10 minutes.
Step two: For the sauce, gently heat the flour with the oat milk to create a roux.
Step three: Once combined, add in the nutritional yeast and seasonings. Simmer until the sauce becomes slightly thicker.
Step four: Drain the pasta once soft. Stir in the sauce to the pasta and serve with a sprinkling of nutritional yeast, salt and pepper to taste.
