Brig Bites: The Best Ever Long-Lasting Summer Salad

Summer is only a short few months away, and with the sun shining and the warm weather, cold, refreshing and hydrating recipes are a must!

Summer is the best season for salad. Refreshing, sweet or savoury – there are endless possibilities.

Here’s my recipe for the yummiest ever summer salad. The best thing is you can keep a batch sealed in the fridge and it’ll last you a few days!

Recipe:

  • A handful of strawberries
  • Half a pack of blueberries
  • A yellow bell pepper
  • Half a cucumber
  • 2 tablespoons oil
  • Lemon juice squeezed from half a lemon
  • Dried oregano (measure with your heart)
  • Powdered or fresh garlic (measure with your heart)
  • Pinch of salt

Optional: add feta or chicken to turn this from a side salad to a healthy lunch. And if you want an edge of sweetness, add a drizzle of honey!

Method:

Cut the fruits and vegetables into cube sized pieces, except the blueberries which can be kept whole. Then, put them into the bowl and drizzle the lemon and oil over them. If you’re adding chicken/feta, add those after the veggies. Finally, add the seasonings and mix well until all combined.

The best thing about this salad is its super simple. It can be made with various different ingredients too – got leftover mango or pomegranate? Add them! Leftover lettuce? Definitely add it! Its the perfect salad to use what you’ve got in the fridge, and it’ll always taste delicious.

This summer salad recipe will definitely get you into a summery mood, even if it is a few months too early!
