For many people the majestic Christmas dinner is the highlight of the festive season, however many dinners end with a tableful of leftovers.
But all that food needn’t go to waste as leftovers from the big dinner can create some brilliant, comfy boxing day scran.
Here are some of our favourite ideas for making the most of these leftovers.
Leftover toastie

If a better boxing day lunch exists then I don’t know it and I don’t want to.
Throwing together all your dinner leftovers into a toastie is not only deliciously dirty but also very simple to do.
Simply a couple of slices bread, I would suggest some thick wholemeal bloomer, and every leftover you could possibly desire.
Of course, turkey and stuffing work very well as do excess pigs and blankets, in the unlikely event any survived dinner.
Plenty of veg work in a toastie as well like roast potatoes, brussel sprouts, carrots and cranberry sauce.
Beyond dinner leftovers, toasties can be further enhanced with a few extras like cheese or sauces.
Done right a toastie like this will feel like having Christmas dinner all-over again only this time it can be in your pyjamas.
Turkey curry/stew
If your leftovers are largely of the meat variety then cooking up a big pot of curry or stew is a strong option.
Throwing turkey, chicken or whichever other protein made up your festive feast into a large pot with some corresponding stock makes for some easy, filling and nutritious meals for the post-Christmas slump.
Add in some simple vegetables, possibly more dinner leftovers, spices, sauces and possibly something to thicken it up.
And with that you’ve got a cheap and easy dinner for the whole family.
Alternatively, you could portion and freeze your creation for cold evenings where you can’t bare the thought of cooking.
Nut roast pie
If you’ve had a vegetarian nut roast for your festive feast then the leftovers can be repurposed in similarly magnificent fashion.
Leftover roast together with any uneaten vegetables and spare gravy can easily come together for a wonderfully warming stew or pie.
Just boil off any new veg, combine with leftovers in a pot with gravy, fresh vegetable stock and spices.
Once cooked, top with mashed potatoes in an oven-proof dish and just like that you’re done!
This is the perfect winter warmer and can keep very well in the fridge.
