To celebrate the perfect pancake day, here is my Dad’s recipe:
113 grams of flour (4oz)
1 or 2 eggs
284 ml of milk (1/2 pint)
Two tea spoons of baking powder
A knob of butter
For a twist: a sprinkle of cinnamon, nutmeg and a tiny bit of ginger
For even fluffier pancakes, make the batter 15 minutes before frying to hydrate the flour. Whisk thoroughly.
For those who prefer crepes:
113 grams of flour
1 or 2 eggs
1/2 (284 ml) of milk
A sprinkle of cinnamon, nutmeg and ginger
Method
Add wet ingredients to dry and whisk throroughly
Add butter or cooking oil to the pan and flip pancakes when bubbles start to form
For the crepes, flip after 1-2 minutes when the bottom is set
