Lentil soup is a staple of almost every Scottish kitchen and rightly so, the cheap and simple broth warms the soul like nothing else.
All you’ll need as a big pot and some time to kill to have a soup yer granny would be proud of.
Cook time: 4 hours.
Portions: 5-6
Ingredients:
- 500g Lentils
- 1 ham hock (Sold in Sainsburys)
- 1 large carrot (Grated)
- 1 large potato (Grated)
- ½ leek (Chopped finely)
- 4 ham stock cubes

Method:
- Boil your ham hock for two hours.
- Skim the fat and add veg and lentils.
- Simmer for two more hours.
- Remove the ham hock.
- Add your stock cubes then pepper to taste.
- Serve hot with crusty bread.
Quick Tips!
- Make sure to stir a lot when you add in the lentils as they can burn easily.
- Meat will fall off the hock, this is good and gives loads of extra flavour.
- You won’t need any salt as the stock cubes have plenty in them.
