Stirling Coffee have announced that they will be opening a new coffee roastery in the old Stirling Observer print works in the town centre. The roastery is scheduled to open on 1 May.
Currently, the business has a shop on King Street in Stirling’s town centre where customers can pick from a variety of different coffee roasts to buy. They also sell extras such as travel mugs, coffee cups, and brewing equipment.
Not only do they sell products to use at home, but they also sell food, baked goods, and hot drinks to enjoy in store.

Stirling Coffee pride themselves on making “some of the best speciality coffee in the world” according to their website, crafting roasts from highly graded coffee beans.
Talking to David McDonald, the owner of Stirling Coffee, Brig asked how he was feeling about the opening.
“It’s going to be kind of unique, there’s nothing like that [in Stirling]. For the last six years we have been roasting coffee down at Stirling Enterprise Park.
“We’ve been searching for the last three years for a site. [This one has] been on the internet for ages. It just kind of happened, we went ‘oh, we’re just going to have a wee look at it’. It’s perfect.”
This is a big next-step for the business. What changes will the new roastery bring?
“We’re relocating the whole roastery [to] there, and then we’re actually going to be doing baking on site, making sandwiches on site, and we’re also going to be doing coffee tasting evenings and roastery tours.
“We’re the only [coffee shop in Stirling] that roasts the beans [locally in Stirling].
“It’s almost going to become like a visitor attraction. [It will be a] massive expansion [for the business]. We are going to get an extra roasting machine; it’s just going to give us a whole new dynamism.”
David took Brig on a tour of the new roastery location. The old print works has been empty for some time now, so a lot of work is needing done, but he is optimistic and has a clear vision in mind.
How does Stirling Coffee feel about the new space?
“It’s a really cool, funky space,” David said.
David said that both the digital marketing team and Michael, who is in charge of the kitchen side of the business, are excited about the new space.
“It’s going to add another dimension to [Stirling Coffee] as well. At the moment it looks like just a coffee shop and a bean shop, but it’s going to [expand] to ‘oh, the roastery is just around the corner’”, he said.
